Mays Recipes for those of us watching the Calories
This week’s recipes are for Chicken
Chicken Curry (serves 4)
4 Chicken Joints
2 Onions finely chopped
3-4 Tomatoes, chopped and skinned
3-4 tsp curry powder (to taste)
1 pt. chicken stock
Paprika pepper if desired
Place chicken, curry powder & vegetables in a stew pan. Cover with stock. Bring to the boil and simmer gently for 1-2 hours, until chicken is tender-Long slow cooking is best. Serve with long grain boiled rice.
(190 calories per portion–without rice).
